Here's an interesting twist to the traditional idli recipe! Soft, fluffy idlis are stuffed with moong, coconut and jaggery, and lightly flavoured with cardamom. You can eat them at breakfast or as a snack. 

 

Preparation time: 10 minutes
Cooking time: 20 minutes
Makes 12 idlis


Ingredients
• 2 cups idli batter
• Oil for greasing
• Ghee for serving

 

For the jaggery stuffing
• ¼ cup yellow moong dal (split yellow gram)
• 2 tbsp grated jaggery (gur)
• ¼ tsp cardamom (elaichi) powder
• ¼ cup grated coconut


Method
• Heat a small non-stick pan, add the yellow moong dal and dry roast it on a medium flame for 5 to 7 minutes, stirring it continuously.
• Allow the mixture to cool completely. Once cooled, add the jaggery, cardamom powder, coconut and mix well with your hands. Keep aside.
• Grease the idli moulds using a little oil. Put 1 tbsp of the idli batter on each mould, then 1 tsp of the prepared stuffing in the centre and then cover the stuffing with ½ tbsp of the idli batter.
• Steam in a steamer for 10 minutes or until the idlis are cooked.
• Serve immediately, topped with ghee.
